How successful is sodium chloride when it is used as a preservative?
What are positive & negative aspects of using sodium chloride (salt) to preserve food? These aspects/consequences can be anything, ex. medical, physical, financial, environmental, ETC.

Salt is effective in preserving food because it causes bacteria that come in contact with it to enter a hypertonic environment, which means water flows out of the cell, because salt is particularly good at dehydrating and absorbing water around it. It prevents a moist environment that is needed for bacteria to thrive in. Its good because it kills bacteria, but is bad if their is too much on it when you ingest it. Medically salt isn’t bad for you, its just that our societies use it too much. Excess sodium can increase your chances of high blood pressure, which leads to alot of bad things like kidney failure, hypertension, etc. Financially or environmentally nothing is wrong with salt.. its a very run of the mill compound, and most sodium naturally occurs as salt.
